Case Study on Fresh Express

Fresh Express had been conducting its employee food handling training using what are commonly referred to as “tailgate” programs at its facilities located in five states. The company had to rely on anual records for documentation of attendance, testing and proof of comprehension making the entire system hard to verify for audit purposes. At the Grand Prairie, Texas site, a city ordinance requiring food handling certification was the basis for a manually administered multiple-choice examination.
